Mango Puree & Vanilla Chia Seed Pudding

This bright and beautiful breakfast or snack screams summer! Packed full of flavour and healthy nutrients, this is the perfect way to start your day, or take along for a mid afternoon snack!

Vanilla Chia Seed Pudding:

  • ½ cup chia seeds
  • 2 ½ cups milk or milk alternative of choice
  • 2 tsp pure vanilla extract or vanilla bean paste
  • 2 tsp maple syrup
  • Pinch coarse salt

Mango Puree:

  • 2 cups frozen mango chunks
  • ½ cup milk or water
  • Another tsp or 2 (depending on how sweet you like it) of maple syrup

Garnish:

  • You can add a few berries to the top to make it extra colourful and flavourful, or a sprinkle of crushed almonds or unsweetened coconut flakes works great too!
  1. Here is what you’re going to do!
  2. Grab a glass bowl (a medium sized one should do!), and mix the chia seeds, milk, vanilla extract, maple syrup and self and let it sit for 15ish minutes. Then mix it all up again, and scoop into glass mason jars. Then put it in the refrigerator overnight to let set. This is the base.

To make the mango puree – place mango, milk or water and the maple syrup in a blender and puree until smooth. Simple as that! Put on top of you chia seed base, and add in whatever other yummy goodies you like (like frozen berries/crushed almonds/coconut).
