Oatmeal Banana Waffles

🍏Tasty Tip Tuesday🍏
One of our favourite things about waffles is that they are the perfect thing to freeze for a grab-and-go breakfast (or lunch, or dinner ;)). Take them out of the freezer, pop in the toaster, and top with a few of your favs (yes, runny egg is the best!) and you have a great meal in minutes.

INGREDIENTS
2 cups oatmeal (small flake, or ground)
2 Large bananas
3 Eggs
3/4 cup milk (cows or alternative works just fine!)
3 tsp Vanilla Extract
2 tsp Baking Powder
1 tsp Salt
Ground Cinnamon to taste
2 tsp olive oil or spray for lightly brushing the waffle maker

INSTRUCTIONS
-Roughly break the bananas into small pieces and add into a blender with your milk and blend until smooth.
-Then add the dry ingredients (oatmeal, baking powder, salt and ground cinnamon) into a bowl and mix. (If you don’t have oat flour or oatmeal available, then you can make your own by pulsing the the old fashioned oats in a food processor for a few minutes. Just pulse until ground fine!)
-Add the rest of ingredients (banana-milk mixture, 1/4 cup of milk, eggs and vanilla extract) to the dry ingredients mixture. Whisk everything together till you get a smooth batter.
Heat your waffle iron and lightly brush oil on both inner sides of the waffle iron. Add just enough of your waffle mix to cover the centre, but not so that it flows out the sides.
Eat up – and save a few for later!
